    keeping it very rustic tonight.

    chicken- grilled for a few minutes on a hardwood charcoal fire then roasted in the oven. covered in olive oil, white wine, sea salt, fresh cracked pepper, slivers of garlic inserted into the meat, sprigs of rosemary and oregano shoved under the skin.

    potatoes- roasted

    baked ziti- leftover ziti, leftover sauce, fresh mozz., grated parm, crushed garlic crustini for a topping then baked.

    bread- pchyea.

    one hundred different cheeses- pchyea

    because delicious food is often better for you. Not sure that can be said for waddsworth's awe-inspiring bacon-wrapped stuffed pork from last page; wow. I'm absolutely doing that next time I feel the need to do something oven-crazy.

    tonight menu: fresh rainbow trout seasoned with sea salt, fresh cracked pepper, herbs d'province, lemon, and onion. grilled on real hardwood charcoal.

    risotto: used 3 parts chicken stock to 1 part liquid used to re hydrate porcini mushrooms. also added gorgonzola, and parmigiano reggiano, garlic, onions.

    We stayed local tonight... Homemade Axis Deer jalapeno sausage and roasted sweet potato. Pairing it with a rustic beer - Alagash Fluxus 2009 - a beautiful Saison brewed with wild yeast, sweet potatoes, and black pepper. The food and beer meld perfectly.

    i just had chocolate chip cookie dough ice cream and i wondered, why don't they make it out of chocolate ice cream instead? might as well add chocolate syrup, sprinkles and chips! maybe forget those last three things but definitely want the chocolate ice cream.

    Cant touch your meals..but I did well tonite. The gf and I had top sirloin steaks on the grill with sauteed mushrooms, orzo, and steamed snap peas. steak came out perfectly cooked. was delish.

    I've never done trout or risotto. I've had poorly cooked risotto, so I've got the impression that it's easy to frack up. But here's an easy one: cedar plank salmon:

    salmon croquettes made from a fresh salmon fillet, topped with a homemade garlic and sriracha aioli, spring greens, and parmigiano reggiano.
