I'm definitely gonna have to try making some. Asian style like you did, but you could do like black beans, corn, tomato, and some seasoned meat and maybe cheese [?] and do like a southwestern style.
i fracking love southwestern eggrolls from bill batemans.

Teacher: Jonah cap off and balls on the ground... Jonah what are you doing?
Jonah: You said to put my balls on the ground miss...
i rarely write down my recipes but someone asked for this and i thought i'd just share it. simple and easy to make. plus you can impress your friends, or any ladies you might be trying to swoon.
coarse sea salt
fresh cracked black pepper
garlic cloves (put as much or as little as you like)
onions (one medium onion)
shallots (four small ones)
white wine (about one cup)
olive oil (extra virgin)
butter (real not that fake stuff)
raw pine nuts (a cup maybe?)
orecchiette pasta
mizithra goat cheese
mince the garlic very fine on a cutting board. once it is minced sprinkle a bit of the sea salt, and olive oil on it. lay your knife flat and use a back and forth motion to grind the garlic into a paste. mince the shallots and onion as well, but dont follow the same procedure with the salt and oil.
put the pine nuts on a baking sheet and place in an oven around 450*, make sure to keep an eye on them so they dont burn, toast until slightly brown.
boil the pasta ahead of time in salted water, when its done take it out and pat it dry with towels. you have to make sure its completley dry.
in a large saute pan add enough olive oil to cover the entire surface. turn the heat on high and add the butter and wine. (make sure to remove the pan while adding the wine unless your comfortable with a little pyrotechnics :P) cook until the wine has reduced slightly.
now add the pasta and toss in the wine/butter/oil. let the pasta brown slightly then add your garlic, onions and shallots. cook until they become slightly translucent. make sure not the burn the garlic, or it will taste very bitter. add the toasted pine nuts as well. salt and pepper to taste.
and last but not least grate a liberal amount of cheese and toss. drizzle a bit more olive oil before serving.

Stuffed peppers. Been grooving on these bad boys for a couple of months (they're in regular rotation). , Boiled then baked green peppers stuffed with grilled chicken chunks, brown rice, onions, a couple of other medium and hot peppers, some other misc stuff. Topped with some cheese (which bakes right in).
i havent had stuffed peppers since i was like 8. i hated them then, but now i always crave them cause they seem like theyd be delicious but mom never makes them
very good sealice. i liked the rabbit recipe. ill try to get some up here when i start cooking more after finals.

I bought a couple pounds of Mahi Mahi and a dozen jumbo scallops today. Decisions decisions. I was just going to sear off the scallops but might go to the market tomorrow and get some other stuff for a Cioppino this weekend.

ceviche all the way. btw, whats your favorite way to spice it up a little? i know some people like different pepper based sauces, ive also had it with sauces similar to sriracha before, and those were all good. but i couldn't tell what it was the time i had perfect ceviche. or maybe it was some sauce combined with a certain alcohol??????
Strangely, I didn't even think of ceviche. It's one of my favorites. Thanks.
I guy I used to work with would bring in tons for the whole office at lunch. He used fresh habaneros in one of the containers. As insane as it sounds, it really was incredible and unless you really can't handle hot food, it was tolerable. My ass will tell you a different story. Don't ask him though, he just talks shit.
