    Default tonights menu....

    Tonights menu: Roasted rabbits with fresh herbs, white wine, olive oil, potatoes, carrots, parsnips, and fennel. Aglio e olio spaghetti with pancetta. And two homemade pizzas. One prosciutto, arugula, and parmigano reggiano. The other Sicilian style with kalamata olives, sauted onions, capers, and anchovies.

    Wow! Is that fried spam sushi? Rabbit looks amazing, I had it a couple of times and it was really good (one roasted, one in a stew). Jeebus, that was a lot of prep for one night.

    Yes! it was soo good. I was watching Andrew Zimmern and wanted to see if I could replicate it. As for the prep time it was only 2 hours from the time i started preparing the food till it was done. Each rabbit was about 2.5 lbs and i set the oven to 350 to roast them. Took just over an hour. The pizza literally took ten minutes to cook at around 475. The pasta maybe took around 15 minutes total. Once I prepped the rabbit and root veggies and stuck it in the oven, I just multi tasked between the pizza and pasta till all the items were prepped and ready to fire. When I saw the rabbit only had say 30 minutes left I fired the rest of the food and viola everything came out together and pipping hot.
