Anyone know what the convention is in China for time? I imagine they use a 24-hour clock, rather than AM/PM?

a 24 hour clock like you mean military time? 0800 hours is 8AM and 1500 is 3pm blah blah.
China is roughly 14 hrs ahead of us. My experience tells me that they use conventional am/pm time.
